☆ Pancake Brunch ☆

I really like pancakes. And pancakes can be healthy too. I found this recipe with carrots and blueberries, and it was really delicious! So I decided I wanted to share it ^_^

Here is the recipe in english.

Pancake Batter:

  • 1,5 deciliter minced carrot
  • 3 eggs
  • 2 dl low fat milk
  • 2 tablespoon oil
  • 1 tbsp agave Syrup
  • 3½ dl spelt flour (or grahams flour)
  • 1 dl crushed buckwheat
  • ½ tbsp salt
  • 2 teaspoon baking powder

Topping:

  • 200g light quark,
  • 1 tbsp agave syrup
  • blueberries

How to make it:
Start with the pancake batter. Mix all dry ingredients and wet ingredients in separate bowls. then mix them together until smooth. Leave to rest for about 10 minutes. While you wait mix light quark together with some agave syrup. this is a great alternative for whipped cream. Then start frying the pancakes. use about 2 to 3 tbsp of mix for each pancake. pour onto a lightly greased skillet over medium-high heat; cook until the tops show broken bubbles around the edge and bottom is browned. Turn and cook until golden brown. Serve with blueberries, agave syrup and light quark.
